A variety of citrus fruit favored by the Japanese, yuzu (citrus junos) belongs to the genus Citrus in the Rutaceae family. Often called ‘Japanese lemon’, yuzu is a natural hybrid of subspecies of mandarin orange and the ichang papeda lemon, originally from China. Unique, yuzu calls for Japanese refinement, Chinese exoticism, and Korean creativity.
